This soup belongs to vegetarian cuisine, so it is perfect for those who practice this food system, as well as those who decide to try to give up animal feed for health purposes.
Ingredients: vegetable broth (1.2-1.5 l), one pound of young potatoes, a white portion with 2 stalks of leeks, butter, salt, black pepper.
Wash potatoes and leeks. Clean the potatoes and cut them into large pieces. By the way, according to scientists, potato peel contains valuable vitamins so you can cook with it. Leeks rather, on the contrary, cut less. Begin to heat the vegetable broth.
At this point, in a frying pan, melt 50 grams of butter, add the leeks and simmer for about 5 minutes. Add the potatoes. Stir everything for about 5 minutes and add salt.
Pour into broth, cover with lid and cook until ready. Then add black ground pepper and finely chopped dill. Serving with the addition of sour cream is allowed.
