Mexican rice

A stove dish that is cooked in the oven will be a good alternative to regular pilau.

For cooking will require:

250 grams of rice 400 g chicken fillet 5 pcs tomatoes; 50 g of hard cheese; 150 g of canned corn and beans; salt, pepper, green – to taste.


Prepare a deep bowl for baking, place it in rice, corn and beans. Remove the skin from the tomatoes (to do this, pour vegetables with boiling water), puree in a blender until smooth. Salt and pepper are thoroughly mixed.

Tomato paste add to croup, mix. Place the chopped chicken fillet on top, slightly immersed in the center of the dish.

Cover the baking dish with foil and cook in the oven for 40 minutes at a temperature of 180-200 degrees. Shake the cheese and sprinkle with it for 5-10 minutes until cooked. Wait until the cheese has melted and remove the Mexican rice from the oven. Sprinkle with herbs if desired.
