Awesome cookies! The most delicious cheese I’ve ever tasted. It smells wonderful, tastes great, black pepper amazingly fit here, as well as the slight kick from the Cayenne.
Very delicious by itself, but I think that it is perfect for dry wine or beer.
Ingredients for “Shortbread biscuits with Parmesan”:
(or other hard cheese)
(or to taste, I have a homemade chili powder on the tip of a knife)
The recipe for “Shortbread biscuits with Parmesan”:
Grate cheese on a fine grater.
In a food processor to combine flour, salt and spices.
Add grated cheese, mix well.
Add cold butter, cut into cubes, and chop into fine crumbs.
Add the egg yolk and mix to a smooth dough.
Molded the dough into a disk, wrap it in clingfilm and put into the refrigerator for 1 hour.
On a lightly floured work surface roll out chilled dough to a thickness of about 5 mm using molds (diameter 5-6 cm) to cut out cookies.
Put it on a baking tray lined with baking paper, put it in the oven.
Bake for 10-12 minutes, until Golden brown.
Before serving, cool completely.
It tastes best biscuits in the day of baking.
